"This little work is designed as a guide in the manufacture of cakes and biscuits of every conceivable description. The recipes are the result of many years experience, and therefore may be thoroughly relied upon. They are intended, not only for practical cooks and confectioners, but for those who have only a slight knowledge of the subject.... many of the following recipes have been published in The British and Foreign Confectioner and The Practical Confectioner during the last six years, and are now for the first time collected together, and have been thoroughly revised." - Quoted from the author's "Introduction".
